Beef Curry with Cauliflower and Zucchini

Ingredients:

• 24 ounces of Ground Beef
• 2 cups of Onions- chopped
• 1 clove of Garlic- chopped
• 1 1/2 ‘’ piece of fresh Ginger
• 2 cubes Beef Stock, dissolved in water
• 2 teaspoons of ground Coriander
• 1 teaspoon of ground Cumin
• ½ teaspoons of ground Cloves
• 3 tablespoons ground Curry Powder
• 1 Bay leaf
• 2 teaspoons of Grape Seed Oil
• 2 Green Chilies- finely chopped
• 3 cups of Cauliflower- parboiled
• 3 cups of fresh Zucchini- parboiled
• 1 cup 35% Cooking Cream or Sour Cream or Plain Yogurt
• ½ cup of fresh Coriander- chopped
• Sea Salt and Pepper to taste

Directions:

• In the oil, cook ground beef, onions, garlic, ginger and beef stock cubes until beef is browned
• Drain excess fat if needed
• Add coriander, cumin, cloves, curry powder, green chilies and bay leaf and let simmer for 15 minutes
• Add cauliflower and zucchini and ½ cup of cream and simmer another 5 minutes
