“Chili Style” Chicken with mixed Vegetables

Ingredients:

• 24 Oz of Chicken legs- skinless
• 1 teaspoon of Grape Seed Oil
• 2 cups of Onions- diced
• 4 Cloves of Garlic- chopped
• 2 Cups of Fresh Tomatoes- chopped
• 1 cup of Tomato Juice
• 1 cup of Sweet Red Peppers- diced
• 1 cup of Green Peppers- diced
• 2 tablespoons of Chili Powder
• 2 teaspoons of Cumin
• 2 cups of fresh Mushrooms
• 2 teaspoons of dried Oregano
• 2 teaspoons of dried Marjoram
• ¼ teaspoon of ground Cloves
• 1 teaspoon of ground Cinnamon
• Sea salt and Pepper to taste

Directions:

• Brown the chicken pieces in the oil
• Remove from pan and set aside
• Cook the onions in the pan until they begin to soften
• Add the garlic and sauté for 1 minute.
• Add the mushrooms and sauté another 2 minutes
• In large pot, put the onions, garlic, mushrooms, chopped tomatoes, tomato juice, red and green peppers, and the chili peppers and cook for another 2 minutes
• Add the oregano, marjoram, cloves, cinnamon, cumin, salt and pepper.
• Place the chicken pieces on top of the sauce, cover and simmer for 1 hour.
