Asparagus and Leek Frittata

Ingredients:

• 12 eggs
• 2 cups of Mushrooms-chopped
• 1 cup of Green Onions-chopped
• 1 cup of Red Bell Peppers- chopped
• 4 cups of Asparagus- cut into 1 ½’’ pieces
• ¼ cup Parmesan Cheese
• ½ cup of Fresh Basil- chopped
• 1 teaspoon of Olive Oil
• 2 Tablespoons of Water
• 4 slices of Multi Grain Bread Toasted- OPTIONAL

Directions:

• In a large nonstick, oven proof pan, sauté mushrooms in oil until tender
• Add asparagus and water
• Cook until asparagus is tender and water is completely absorbed
• Add red peppers, green onions, sea salt, pepper and basil and heat for 2-3 minutes
• Whisk eggs and pour over vegetables, stirring to ensure even distribution
• Cook over medium heat for 2 minutes
• Sprinkle with parmesan cheese and place pan in the oven
• Broil for 4-6 minutes or until the top browns
• Remove from oven and allow to cool for 5 minutes or until the eggs set completely
